Can anyone point me in the right direction? Why would a wood floor cup without coming in direct contact with a water leak
ie. broken pipe, failed water heater, etc.

Moisture content in the subfloor leaching into the wood floor. Is this on concrete? Concrete is famous for allowing moisture to pass through it into the flooring layed on it. Did you apply a vapor barrier?

Thank you Mike for verifying my admontions on vapor barriors.
tadcom, the reason for cupping or bowing is because there is more moisture underneath the wood than above it. My guess is that you 'cheaped out' and was ripped off or were simply ripped off.
I was taught to lay boards so that they would always bow when wet, I guess that it was an old safety measure.
