The higher the sheen the more it will highlight imperfections. I personally like a satin but its a personal preference I generally leave to the customer.

What sheen level is best for walnut trim? The house is trimmed out craftsman style with walnut on everything. Base, casing, door, stair, coffered ceiling, etc.
Everything will be stained something similar to a dark walnut. Walnut can show defects and scratches so easily, I think the finish guy normally uses a high sheen finish. Would you go with a satin?

First...why are you staining walnut?
I usually use orange shellac to warm it up but have never stained it.
I personally think walnut isn't that attractive unless the pores have been filled.
But, I'd have to go with satin regardless of filled or not. High gloss looks cheap to me and will only accentuate the pores even more.

I think you'll only find semi gloss on something like a waterbed frame.

Are you talking about darkening up the sapwood to match the heartwood?
I try to avoid using sapwood. Walnut can have a lot of color variance from board to board. We typically use a dark walnut stain on all walnut.What are you using for stain?

I think it depends on what you want to see. If you want to see the finish (and any underlying imperfections), use high gloss. If you want to see the wood, use an oil finish with little / no build. The last walnut I did I used a low build tung oil finish, final sheen was a semi-gloss
