Thanks for the response Shellbuilder. The picture was from an old thread on here but it got my point across.
One I'm looking at is existing, the house has additions but they never cut out the old sheathing.

You don't have to cut it all the way out, I just do it for looks. It should be cut for maintenance access and recreating eave ventilation to the old roof lost by the piggyback roof. I would do whatever you are going to do up there before it gets hot.
