I am looking into entering into an associates degree in architecture or an associate's degree in construction management. What do you think would be more beneficial in becoming a general contractor? Which would benefit me for all types of remodeling and home construction?

I honestly don't see much value in an associates in architecture, but may just be me. My vote would be construction management.

Education

It really depends on what the State requires for license qualifications where you plan to get the license. My advice would be to get the most out of your education towards the license.
 In California 2 years of experience can be replaced by 2 years of certifiable education time.
