I started to plane some lumber to make a front for this cubby hole to make it a better hiding place for my safe and guns. My plan is to make a lower door with false drawer fronts on it and an upper door where I can put my long guns and hang coats. I thought that while I’m at it that I would try to add a little more fire protection. Any suggestions? The safe is fire rated at 1700 degrees for one hour. I was thinking maybe another layer of drywall?

Type X is probably your best bet. Keep in mind, if it's on floor joists, those joists will be long gone before you hit the 1 hour mark.
