It's supposed to keep one from easily depressing the bolt and gaining access....
What Griz said. It can be pretty easy to depress the bolt on a poorly installed door by sliding a credit card into the bolt on an in-swing door or a more complicated tool for an out-swing door. The security tab won't release when this is done so the door remains locked.

To cc a door you simply slip the card into the strike plate and allow the card to slide along the curve of the latch and the door will open.

If the latch is depressed at all and the security tab isn't, the door will not open.
