I am interested in replumbing my copper pipes with pex pipe,using a main manifold with turn off vaves in garage next to hot water tank.Is it necessary to run hot and cold runs for each fixture in the same room or can I tee off the supply runs to that room(ex. one tee off for dish washer ,another tee off for the sink from the hot and cold runs off the manifold) Where can I get information on how to replumb using pex?

Louis, I recommend that you hire somebody that knows what they are doing. It is obvious from your question that you should not attempt any plumbing right now. Get some books and do a lot of reading.
