Order in which you would attack this..

Ok. How would you attack this? It's an interior job, every room has two piece crown, that's just been installed. It's four empty rooms. White on ceiling and trim. I'm thinking after I get everything prepped, that I'm going to spray all the trim first then tape the hell out of everything, shoot the ceilings and then hit the walls.

Ha. Kind of important piece to leave out.
No colors picked yet (maybe graphite?)
White Semi trim & doors
White flat on ceiling
Flat on walls as well, smooth walls & ceiling
Semi gloss cover flat better than flat covers semi. So I would not mask, spray all flats first. Then mask both sides of trim, and use the smallest tip you got like a 2** or even a 1** tip. A masking gun will speed it up further.

Off the top of my head:

Ceiling first. Mask around ceiling and spray trim. Mask trim and spray walls.

Your way is good too. That's probably the way I've done it the most.
