"Hinge Gain" allows both leafs of a hinge to be 'mortised' into a door. The hinge is face mounted on cabinet

Mortising the "hinge gain" extra depth for the second leaf give or take.

Like Griz's explanation better :)

So mortise is actually a verb!
:whistling If you have a router or hammer/chisel in your hands

It is both a noun for the space to receive a hinge or tenon and a verb for the action of creating the pocket, called a mortise
