Hey everyone, I'm new to the site and really just looking for a few recommendations going forward on a project I have. I have joists that slope about 2-2.5 inches at the lowest point and am looking to level the floor for new pergo flooring. My question is will the existing floor be okay to add on,

should I just add some bracing, or does it need new sister beams and all new subfloor put down? I redid the ceiling upstairs and added bracing and removed the old Plaster which was a lot of weight and spaced that down 1.5" so I would need about 1" of level on the floor side. Room is 9ft wide by 14 or so feet long.

You can try working with miter saws for the floor. You'll have to adjust the width and height balance. You have someone draw a plan, I say. It may require professional help, this is my opinion. Otherwise, you may lose the material you have. :(
