There's no doubt the Unilin system is the easiest, but Wilsonart's tap n lock is quite good too, not as easy, but a great system.

I have no preference. On runs longer than about 10 ft. you wind up tapping it into place anyway. The only good thing that I see in a click system is that it HELPS hold everything together and is faster than subflooring, nailing, etc.
I always glue, to seal the gap. The up/downside is that the glue acts as a lubricant until it sets. Tapping in is easier but you also have to watch for gaps in prior courses as they can come apart easier.
