When you install new trim and paint it or spray it do you caulk it and paint the caulk the color of the trim or do you paint your trim then tape it off and caulk it and paint the caulking the color of the wall. Just want it to look super sharp.

I like to prime all before any caulk. So this is my/our system...

1. Install trim.
2. Prime trim, walls, ceiling.
3. Caulk and fill.
4. Paint trim.
5. Paint walls and ceiling.

Much more to it, but that is the basic picture.

On new construction, the walls are primed before the preprimed trim is installed. Once the trim is installed, we fill holes and sand. After that we caulk and then spray trim. After that we cut and roll walls.

Usually the caulk gets painted the color of the trim, but sometimes you have to fudge a bit if the walls are wavy. You want to keep the transition line as straight as possible to keep from drawing attention to any gaps that were filled.
