The customer asked for maple. You tell them the price and schedule for maple, and the price and schedule for something else if you want. In my opinion, aiming for a close substitute would be a mistake; if it's to be something else, make it a design decision, not a substitute for the real thing.

This is good advise!

Especially on something like stairs. Saving a few bucks and the "just get it done" attitude should be reserved for other less permanent parts if the house. Stairs should be built for the life of the house.
