You're not BOUND by any one method to figure it out. In the end, you're giving the guy a price, a contract price. You can figure it by the sf, or by the height, or lf of plate, how many floors you have to hump materials, and so on. Start with sf, and throw in the factors to get your price. If you come up to the guy and say "I will do it for 'x' per sf" then you will get exactly that.
