In addition to using the adjustments others have suggested I will usually make a split jamb for swinging old doors in new jambs. Basically an oversized T&G joint. It lets you twist and kick around one side of the door to line things up and still get the casing tight to the wall. To help with that I bevel the jamb edges back 2* as well. Unlike a normal split stops are loose which gives you a little more adjustment as well. I hang quite a few old doors in new jambs and have found the splits to work well dealing with old plaster walls of varying thicknesses.

By the looks of the FJ casing you are going to paint the trim.
You can take that all out by pulling the jamb legs out/in and once everything is caulked and painted only you will know.

You may want to get a coat of finish on the doors to seal all the wood on all sides and edges
That's what I was thinking. I never nail off double doors until I adjust them just right.
But if they are warped that's a whole nother ball game. Smoke and Mirrors.
