get draw downs made for the sheens and colors, and have the customer sign off on them.

A painting contractor isn't obligated to confer with the client about color choices, but the least they can do is provide more than just color chips to help the customer make happy color choices. I'm more than glad to provide draw downs of different sheens and colors, especially if the job is sizeable one. The overhead for doing that is minimal. The payback is appreciation and word of mouth referrals.

I generally don't get involved or offer opinion regarding color choices, unless asked. If I had concerns I would simply be sure to specify the color scheme in the estimate / contract and have the customer sign off.

Funny enough any color scheme I thought might be questionable usually ends up turning out quite ok.

I would advise the customer against the flat trim, but if they insist then sign off and have at it.
