Repoint - Grinding Advice

Morning all, figured I would start a new thread to have it separate from my other post.

Looking for some grinding advice. I did get the Bon Tool router bit and the head that JBM recommended. Just need to find a grinder local that fits the head.

So, was grinding along with 1/8" blade, I also have 1/4", so question is do you guys just relief cut then start chiseling? I attached a couple pics, where I just let the grinder do all the work, but then you score the top and bottom of the brick. So I looked into the Trow & Holden tool...but for large areas just seams like that's not the right tool either. The mortar being removed is type N maybe a tad stronger.

So how do you guys handle this? Plus do you go with BIA standards? 2 1/2 time the joint depth?
