Maple Syrup Vs Pancake Syrup?


Maple syrup...

I've tried several over the years, since it's supposed to be superior to anything else. I still don't "get" the taste, and prefer plain old Aunt Jemima instead. Some in the family have scoffed at my apparently ignorant palate. Am I the only one that thinks this stuff has a weird aftertaste..sort of metallic or something?

Btw, generic syrups taste awful to me.

No contest for me. Real maple syrup all the way. Might be psychosomatic. Something that comes from a tree and is boiled down vs chemically modified cornstarch turned into goo.

It's not psychosomatic...just the taste. I could tell in a blind taste test.

I'm about to make pancakes and will test again.

Regarding the bitter taste, it is somewhat evident to me, but not in a bad way. Different brands may have it to a greater degree. I toured a maple syrup (farm?) and they said you have to take the entire batch down to syrup without adding more of the maple sap, or else the first dose of sap you put in gets overcooked and bitter. One of the reasons it's expensive, You have a giant pot that only makes a small amount of syrup, then you have to clean it and start all over.

Find a small family place that makes it. Used to help a friend and he was always sold out with preorders. Big difference in taste between processors.

It's also graded light - dark. I believe the darker has a "stronger" flavor.

It seems the commercial pancake syrups don't care much about flavor. They are more concerned with a thicker texture. Real maple syrup is pretty thin at room temperature.

I am definitely in the real maple syrup camp, but the fake stuff works.

The real deal actually has health benefits, the fake stuff just the opposite.

That's really a secondary issue tho, it's the taste that counts.

I get my syrup from Canada, made by family with love.

They do make different grades from a very light amber to a very dark amber, you might want to try the dark amber.

real anything over fake
we used to make it when I was a kid up at the cabin
was fun to go out in the winter to tap trees and collect all the sap. then boil it down
my dad also had some be hives so we got fresh honey in the summer . that stuff was really good!!

I've never had a metallic taste with maple syrup, only artificial sweeteners.

Heat is used to caramelized the syrup, giving a darker color. If it got so hot it scorched, it will get a bitter taste.

Metallic isn't quite the word, but I can't put my finger on it. Bitter/acrid, maybe. In the same way that diet sodas have an odd aftertaste.

Speaking of taste, can you folks tell the difference between regular meat and irradiated meat? I sure can. Irradiated is kind of like tasting the faint spell of burned human hair (like from a match, etc). Gross.

That is what I was thinking too I don't know if I ever had real maple syrup. I guess that will be on my Bucket List as soon as I find some I will have to buy a couple just to try them!

......maple syrup is meticulously graded, using a newer grading system (so no more “Grade B”). According to Butternut Mountain Farm, this new method of categorizing maple syrup went into effect in 2014 for Vermont, and 2015 for the rest of the U.S. Based on color and flavor, they are:

Grade A Golden, Delicate
Grade A Amber, Rich
Grade A Dark, Robust
Grade A Very Dark, Strong
Processing Grade (for food products, not retail)
