Life Does Not Suck Tonight

Just got through about 4lbs of stone crab claws

Here is one plate I stopped to take a pic of, coincidentally... It's the first plate, got through 3 of them. Buddy stopped by today and had a good haul this year.

That is a great ending to a day when you get a good solid dinner.

Little background is I have been working on my truck for 3 days trying to figure out the problem of no start. It's a heui (simply genius) injection system. Pulling what's left of my hair out trying to figure it out. Today I thought it was about $2500 fix and wife says, "we better do the crab claws tonight.". Good woman.

I stop and sit about all the other possibilities other than the high pressure oil pump and just check some random things (already checked all main fuses and relays) and after dropping about 1k on sensors and harnesses... It turned out to be a $1 fuse that is back up underneath the chassis direct from the battery before the terminal box.

Big win/win today

I do tablespoon of garlic, teaspoon of lemon juice, stick of real butter, and blackened redfish magic or old bay to taste. I like ground cayenne in mine for a little zip... It's my goto for shellfish.

That sounds great! Blackened Red Fish magic is where it's at. I had dungeness crab clusters at night or I'd try that tonight.

There is a place near me that serves them split down the middle so each side is one "cluster" probably a regional thing with the terminology. Pretty sure the local grocer calls them the same. Name: 2016-11-26-20-56-04--459506489.jpg

I love stone crabs, can't find em around here. I'll probably hit up Joe's when I'm in Vegas this January.

Re: Life Does Not Suck Tonight

Fresh and local is where it's at, no matter what. I like king crab and other shellfish but when it's straight off the boat and in the steamer it's the best. Just like fish.

Went to Colorado and was asked why I was eating lamb and I thought, "Have you ever heard of a lamb in Florida? It would be nasty.". Gotta go with local flavors. Dungeness in NoCal is a must that I have yet to do.

I like food. Sometimes it influences on where we are gonna vacation

Where were they harvested?

California commercial open from Pt. Arena to just north of Monterey.

Oregon has limited openings due to demoic acid levels.

We open here Dec 1.

Early sport crabs have been the best we have had in years.

Oh yea, we just call clusters a half crab....

Yep

Only stone crab as it's the only local crab that's worth eating. Blue crab down here tastes like dog****.

I've only ever done it though on day of harvest. Does it work otherwise?

Cook in the pot as normal.

Rinse thoroughly.

Pat dry.

In to the smoker for about 40 minutes , 190=200 deg.

If you can cold smoke about an hour.

Wrap in plastic bag and into the refer until the next day.

Eat as usual, they are rather good. VERY faint smoky flavor.
