Left The Meat Out...
Last evening I bought a brisket intended for cooking, but left it out and forgot about it until this morning. Still wrapped. Safe for use, or not?

Not a bad thing for it to get to room temp before cooking anyhow. I usually will pull mine out around 6am and throw brine salt on it and let it sit until around noon dry brining. Then I use the rub and start cooking after the smoker gets going.

Beef can stay out a while, especially if still wrapped. I know butchers who keep beef hanging until it starts to rot on the outside, then skim the goo off and cut it up.
Supposed to make it super tender and tasty. I think we worry too much about food getting old sometimes. Sent from my SM-N950U using Tapatalk

Seriously, if it smells okay ,it probably is . I’ve even eaten iffy beef more than a few times with no problems . Heck , I’d probably never get a good cut of beef if it wasn’t for the reduced section. |

Cooking it to 180+ degrees(which I usually do with brisket) will kill any active bacteria but you should make sure to refrigerate it quickly after cooking as there will probably be a lot of spores that can start spreading. Heat the leftovers well, too.

Not yet, but I will. Somebody else got scared, bought a replacement cut, and was about to pitch it.

I've got a brisket sitting on the counter in a pan as we speak. It'll sit there until around 8am... Then I'll brine it until noon... Won't go on the smoker till around 1:30....
I'm still here and I've been eating a lot of brisket this year. Advertisement
