Another easy chicken dish...I go for the bone-in, skin attached chicken breast because they are cheaper.

Preheat oven to 350*
Put one cup of uncooked rice (I prefer white) in the bottom of a 9x12 baking dish.
Lay two breasts on top of the rice
Combine 1 can of cream of mushroom soup and 1 can of milk together and pour it over everything
Salt and pepper on top
Bake for 1 hour.
Easy, quick and tasty.

Today I bought a bunch of bone in frying chicken and put it on the smoker and mmmmm my god it was juicy and good. Feeds a lot of people for cheap!

I mix lemon juice and melted butter together and lather it on a few minutes before taking it off when I grill chicken....if I'm not using a BBQ sauce.

When I have guests over, I like to cook pre-cooked food and then present it as if I cooked it myself.

Costco sells the rotisserie chickens for $5. I'll get 2 or 3 depending on how many people I'm expecting. I put them in a big turkey roasting pan and put it in the oven for an hour at 290 along with a bag of Kings Hawaiian dinner rolls. When the rolls come out, they smell and taste fresh baked, and the meat from the chicken is so tender that its literally falling off of the bone! So then what I'll do is cut the birds into quarters and discard the backs and present it in a glass Pyrex dish.

If I ever serve wings, I go to Dominos and get a party pack and do the same thing- heat them up in the oven and put them in a baking dish.

For mac & cheese, I'll get the frozen pan and cook it for about 45 minutes. Then I'll stir it, add sharp cheddar cheese and breadcrumbs on top and cook it for another 20 minutes so that it will have a nice hearty crust on top.

For ham, I like to do is to get one that is pre-cooked and spiral sliced. I cut the bone off of it and then re-heat it in the oven with a glaze that I make from sugar, nutmeg, and a few other spices.

At Coscto they have a bagged kale salad that I like to serve. Nobody believes me when I tell them that I didn't make it or the dressing that it comes with. That always seems to be the one thing that I run out of.


So essentially I can lay out a spread for 20 people in less than a couple of hours and make it look as if I've been slaving in the kitchen all day long.

Try cooking it in the oven, on a cookie sheet--450 degrees--if you have parchment paper -place that under the bacon first.

I love to coo, and holiday dinner duties are mine alone. Even the pie crusts.

Now, the mess in the kitchen.......well, I snap my fingers and my wife cleans it right up!


Here is one for you guys that have an hour and wants something different, but you are a meat and potatoes type of guy.

I peel a few large potatoes and boil them until they are tender, while they boil, you can brown a little bacon, or sausage, or even hamburger...whatever.....and then take them out of the water, put them on a baking sheet, and with an old fashioned masher, mash them until they are like an inch or less thick. Then top with lightly browned meat, and into the oven and bake for a little while, until brown....take out a few minutes before they are done and sprinkle with cheese.

Try it out, and be flexible.

I may try that.

Occasionally I'll chunk a few potatoes, throw them in to steam (I don't like boiling 'em), and brown up some ground beef. Drain the grease off, throw in a pack or two of gravy mix, and pour that over the potatoes when done.

Now, I have had fried bologna, but where do you get bagolna?

I still like Spam. But only fried. My wife's family cooks it with fried potatoes using the span in place of corned beef.

But on the topic of bologna, used to be a country store 40 years back that had Wilson bologna in big old sticks...and they would slice up your order. I have never, in the 40 years since that store closed, saw the original Wilson bologna or had any as good as it was then. Or maybe.....we just thought it was steak.
