I'm looking at a setup with a cold smoke box on it. Perfect for those types of things. Cheese as well.

Not sure. Haven't used one. I'm a propane guy these days, but like using pellets for smoke in my gasser.

I'd love to use a wood fired smoker, but I dont have the time to mess with them, and I'm usually only smoking for 3, so it's a lot of work for those spur of the moment smokes.

Another Denver steak....

Marinated in lime juice until it came to room temp....plenty of Kent Rollins seasoning on both sides....basted it with melted butter until it was 135*...took about an hour to cook...built the fire back up and dropped her in the flames for 60 seconds to char.

This was about a 2 pounder...only could eat half.

Could cut it with a spoon (almost).

Great inexpensive cut of meat....$7-ish per pound.

Lots of cooking today. 8 racks ribs, 2 brisket, 2 pork shoulder, 10 pounds sausage. Will be a nice day at church tomorrow afternoon.
