Was going to suggest checking your oven to make sure the element is not varying in temp but that seems like the culprit in this case... also, if you have it, avoid using convection oven setting...

We always take the cookie out a minute earlier than recommended and let them sit a few minutes on the pan as it cools before transferring to the rack... come out great... you know they're going to be good when you can just see the edges starting to turn brown...

Do yourself a favor and braise some of the legs, like 4-5 hours till itís falling off the bone, shred and do shredded meat things with it, like put in a taco, or on a bun with some sauce and slaw, or in a stew

or braise till tender, coat with your favorite sauce overnight in fridge then smoke to temp the next day

I used to just breast them out too, now I keep most of the legs unless the are shot to hell.

After a few times it only takes about 1 min extra after breasting them out to get the legs

Tom,

I forgot to mention you need to test the leavening agent (in this case baking soda);

1/2 cup hot water, 1/4 tea spoon vinegar, mix, drop in 1/4 tea spoon of baking soda, the reaction should be instant. If you don't get an instant reaction, replace the baking soda.

Baking powder is simply 1/2 cup hot water, 1/2 tea spoon baking powder, should get instant bubbling.

Don't over mix, you'll over heat the ingredients.

Make sure you fully cream the butter/sugar mixture.

If you still have problems with flattening add 1/4 teaspoon of baking powder (in addition to the baking soda).

What a great weekend of fishing cohoes. We ended with around 30lbs of cleaned fresh fish and finished Sunday with a nice family meal. Lime, cilantro, chives, salt and some dried cayenne and ancho chile on the olive oil drizzled fish to grill. I made a mango chutney to accompany the fish.
