Re: Any Of You Cook?

Boston Butt cooked in a slow cooker for 12 hours on low.

It won't win any awards and was cooked "naked" with just some spices, chopped onion and garlic in the bottom of the pot.

When it cools, I'll tear it apart and put double portions with some juice in vacu-seal bags and freeze them.

Each can be thawed and used for either a great cold pork sandwich (mayo, S&P) or mixed with some sauce for pulled pork sandwiches.

Iíve had a lot of salmon dishes in my life (salmon is my favorite fish)Ö This is by far my favorite.

Itís oven roasted and the mixed vegetables are cooked with it.

I wish I would have been exposed more to fish growing up.

Fishsticks with ketchup was our idea of a fish dinner.

What did you think of striper? I found it too strong a taste.

Nothing like fish caught and eaten the same day. I bought some walleye at the Central Market fish market in Austin once, it was so so. Fresh out of the great lakes it's superb.

Striper is like white bass, if you don't cut the bloodline out it tastes like crap.

Re: Any Of You Cook?

Wasn't my favorite that's for sure. Like you said, strong taste. We'd eat them hours after catching. They're big enough that you take what you want and give the rest away. I'm not doing that with Salmon or Trout though.

Tuna on the grill is great. Trout with a slight breadcrumb coating is nice. Fluke and Flounder are mild tasting, but very nice. I almost never put lemon on a fish, to strong. I like a tartar sauce for most fish. Tuna needs nothing but some Italian dressing while cooking.

Re: Any Of You Cook?

Pork butt Agrodolce, braised in the sauce strained, fat removed, reduced finished with butter off of the heat.

Was awesome, but I'll sousvide the meat next time.

Would be equally awesome on ribs or chicken, anything really.

I like tuna grilled with just a little bit of sesame seed oil while cooking. Seered, never cooked through.

My favorite all around fish is still American Red Snapper. Doesn't matter how big they get, they're just as good. Fried, grilled, pan seared or whole baked, delicious. My regular go to is Gag Grouper grilled though.

Come on, Mike. I know some guys make a point of liking their steaks rare, but at least put a little sear on it.

I had a stepdad that like that way it was called Walking wounded. He would tell the waitresses he didn't even want it set on there for more then 30 seconds 15 seconds on one side 15 seconds on the other side and that was done!
I personally think that is seriously gross!!!

Family said it was good....I thought it could have been a bit better...maybe more seasoning. Smoked turkey on the grill tonight.
