Re: Any Of You Cook?

Would recommend "Melinda's habanero ketchup", best ketchup that I taste in life. Many in comments agree with me. But is 3X more expensive than store ketchup. So just good to eat from time to time.
Other thing that I bought recently is "Calphalon unison sear 6 quart sear pan" https://www.amazon.com/Calphalon-Uni.../dp/B0028UAAA0 . However price there is ridiculous. I found one pan at Marshalls for 50$.

Re: Any Of You Cook?

As some of you may guess, I had grilled rainbow trout last night. One fish fed daughter's entire family, my wife and myself. Those "holdover" trout are kinda like a cutthroat trout and taste very much like salmon. The meat is more orange than red tho. Self caught and grilled the same day make for a mighty fine meal. I was in a hurry and did not get any pics of it after the grill.

Re: Any Of You Cook?

I did pork carnitas last night. My family is used to being the Guinea pigs for my cooking. Usually, it's a home run, or at least a triple.

Last night my kid was trying to be tactful when there was just something missing.

Ended up missing any hint of taste. Sigh, ya win some, ya lose some. I was in a hurry and just threw in what I thought was enough. Three extra pounds of pork tends to mellow it out a bit too much it seems. It did have a nice light flavor going. Not what they wanted so it seems.

Leftovers will go into chili later this week. I'll heat it up a bit.

It can happen. Ate myself sick on fried shrimp in high school, 3 lbs. by myself. Couldn't eat another shrimp for 10 years.

Best shrimp I ever ate I castnetted that morning for bait. Couldn't let them go to waste so I boiled 'em up for dinner.

Re: Any Of You Cook?

I have "Country style beef ribs" on the smoker right now.
I think this is the first time I have done these.

The next thing I want to try is smoking a chub of bologna,Maybe 2 pounds, scored and rubbed with mustard and secret spices.

I called a seafood market and they have jumbo lump blue crab meat frozen.

Anyone know if this would be okay for something like imperial?

I'm thinking the dish is so moist anyway, frozen and thawed may not make much of a difference. At $46 per pound...I don't want to make something not fit to eat.

Any opinions?
Ever try the canned crab meat?
Makes a decent cake. Not sure about imperial though.

I ate so much blue crab when I used to crab fish off Siesta Key. Haven't had it since, probably would like it again. I did get sick of it though.

That is about the only fish I tend to eat, other than raw tuna.

Re: Any Of You Cook?

I haven't made anything out of my usual lately... So tonight was roasted salmon, streamed broccoli, and rice.
I'm not dead, so it didn't turn out too bad.

No real recipe... I was just feeling lazy...
Stainless steel pan with a coating of sesame oil on the bottom. Salmon topped with dill, black sesame seeds, garlic powder (should be minced garlic), and finished with fresh lemon juice just before removing from the oven.
Drizzle lemon and oil from the pan over salmon before serving.

Re: Any Of You Cook?

dill is excellent on any fish.

i make a dill sauce & a tzatziki sauce that goes great with fish.

awesome on fish tacos or fish burritos....

rather nice as an alternative to butter for fresh dungeness crab also...
