Swiss chard, escarole, dandelion, spinach. I am all for it I love sauted greens.

Also a huge fan of collard greens and can make a meal out of either. My better looking half not so much, she needs meat to complete the meal lol.

Do you have charcoal or gas? I've cooked a few turkeys and many sirloin tip roasts on my Weber gas. Just put them in a roasting pan over the middle part of the grill, cook indirect method leaving the middle burner off. Oh, and make sure you season with your favorite spices.

Saturday's catch. Hot quick fire with honey butter glaze with garlic and touch of 5 spice blend. I usually give my catch away to family, but I enjoyed this.

Grilled a smallish Delmonico last night from the meat market a few miles away from me. Pretty tasty.
Baked potato wrapped in foil in the coals...butter and homemade very chunky blue cheese dressing on that.

Got the barrel for the smoker back last week after the brackets were welded on. It's been too hot (for me) this summer to mess with it. Smoking this fall!

Had ribs last night (again)... Didn't have any of my alder left, so I grabbed some chips from my cold smoker (that I've never used), wrapped them in foil, and grill smoked the ribs with hickory chips.
Lately, the little lady has been insisting on letting the meat 'rest' after I pull it off the grill... So this time I set them in a container and threw the smouldering foil pack in there too.
Holy **** was that good. Might do them all like that from now on.

I don't know why but I never really gave any thought to smoking on my gas grill. Your post inspired me. I just got a new Weber that is hooked to natural gas. Today I was thinking about your ribs and found a cast iron smoker box for a grill. Loaded it with some apple and cherry wood chips and smoked some pork chops indirectly with the box over the burner at around 275 for an hour or so. Maybe a tad over cooked but still pretty juicy and a nice light smoky flavor. I can see trying ribs next in my future!

Normally I would call you guys a bunch of f****** Yankees. LOL. You smoke with wood in Texas. Unless you or a city boy or something. LOL

BUT - I went on a camping trip to Junction a few months ago for 6 days with my family. My in-laws brought their RV as well, my father-in-law really wanted me to cook him some ribs. He loves my ribs.

Well I can't haul a smoker to a state park and haul the pop-up we are using its time. So I figured I would do what I did when I smoked all those briskets for my brother-in-law law's wedding in May, smoke a couple racks on an old smokey, coals offset to the other side. Just chop up Mesquite with a hatchet into chunks and smoke it like that.

State Park was in a drought and would not allow wood fires of any kind, nor charcoal.

So I already had the ribs and decided hell I'll just try it on here. I did propane for 4 hours total, the heat was a little more intense than a charcoal fire I would do 6 hours on. They were not nearly as good but they were fall apart New Orleans style ribs which he likes so everybody was happy anyway. They were tasty ribs for what they were.

I got to have a good smoke ring and they need to be very tender but still leave a clean bite for them to be awesome ribs. I only get that about every other time I smoke ribs. Still a rookie. LOL

I will say for fall apart ribs propane will work. Just need to stop on Plenty of butter and sauce for that kind of ribs.

The secret to smoking on a gas grill is to raise the lid a bit. Closing it snuffs out the air and your smoke box won't smoke enough.

Friend of my wife gave her 5 pounds of large shrimp.

3 cloves of fresh garlic, two cubes of butter, finely diced onion, fresh parsley, diced tomato & basil, bottle of white wine and some fresh linguini the shrimp turned in to some absolutely kick ass scampi....

bought boneless pork loin for $12.83. Cut out 16 1" thick chops, vacuumed sealed 2 to a bag, froze, will roast what is left for sandwich meat.

$1.59 a pound, that's cheap eating.

Day, you're a retired man, ya gotta get into curing and smoking meat. Turn that cheap loin into Canadian bacon, then smoke to 145, slice and vac seal.

Then open up a pack, slice a bagel in half, apply the back bacon, tomato, cheese, fried egg...hand that to your wife and enjoy getting laid that night.
