When to grind a concrete countertop

Hi guys,
Im taking a shot at my first countertop, and am wondering how long i should typically wait after the pour before i take the wet grinder to it. ...same day? ...next day?

finished the pour today. ...did some reading and 4 to 7 days seems to be the window for grinding?

One of the real experts might pick up on this for you. My experience is fresh and limited, but it's 3 days in the form and then grind.
