One thing to consider is your part of the country. Many stock plans are designed to be built over a basement area and have no areas dedicated to mechanicals and sometimes washer/dryer locations. Basements are not universal. You will find them on my area, but not often. They are almost entirely unheard of on new homes.
You have to modify the usage or plans to accommodate these problems and that can sometimes make the cost savings of a stock plan go through the roof, not to mention the issues with copyright infringement etc.
We don't do new construction so this is not an issue for us, but it certainly can be seen in the homes in this area. Furnaces and A/C units stuck in hall closets by bedrooms, water heaters stuck in the attic.
Professionals are professionals for two good reasons. What they do isn't easy and they earn what they get paid.
As someone that works in interior design, I'm sure you run into examples of this all the time.
