Clear Coating Fir Doors, Suggestions Anyone?

I have simpson 2 panel vertical grain fir doors I want to clear coat. Any tried and true methods you fellows could suggest would be greatly appreciated. I would like to diminish the stark difference between the heartwood and latewood. Thanks.

Zinsser bullseye shellac base sanding sealer followed by your favorite poly. Sand and tack between coats and it will be money.
