Bar Top, Wood Has Shrunk. Help

Last fall a contractor I work for had a nice project, full finish basement with lots of wood. This included a bar built out of fir, the carpenters used biscuits and glue for the bar top, then I stained and applied 6 coats of polyuerathane. A new HVAC system was installed during the winter the HO turned the humidifier to the wrong setting basically off and all of the wood in the basement shrank, the main worry is that the bar top has large gaps between the boards 1/16-1/8" . This was my first bar top. I need some help with the best solution I can do for this project. All wood was in the basement for a couple of weeks. Do you think I can fill the cracks, stain and apply poly.

Thank you for help on this ordeal.

Yes you can
-Chances are much greater that it will look like crap than that it will look good
But you can

I'd suggest a new top, a veneer, or a solid coating (to hide repairs)
