Advice On Products And Procedures

Boy, I've been on here a lot lately, but I just want to make sure I am on the right track. There are two bids that I am working on right now that are new to me. If you see anything that should be done differently, can you please let me know?

Bid # 1: Ceiling in coffee house (the late night job) LOL, I just got that!

1) TSP entire ceiling
2) tape and float long UGLY crack and possibly spackle many areas where new light fixtures were installed (they never match). Should these areas be primed first before spackling since old paint is semi or is TSP enough?
3) Prime with Gripper
4) two coats semi gloss paint

Bid # 2: Paint kitchen where wall paper was previously removed by HO. Old paint was pulled up with it and looks pretty bad. Peeling all over.

1) sand
2) prime with ? to prevent anymore peeling.
3) float walls to make smooth again.
4) second prime (I forget the name of the BM primer for new drywall, etc.).
5) two (or more depending on color) coats of paint.

You guys are the master painters I trust you will give the BEST advice.

Yea, whatever. Apparently, it is required that the food prep area of a restaurant be painted with a paint that is washable. Maybe the rules are different where you are. Or maybe you were too busy stuffing your face with turkey to read properly. But, if they tell me semi, then that is what I'll use. What do I care?!
