We use white in all commercial for phone. So I keep it the same way for resi.

Can't say that I have actually seen grey available from the supplier. I've only ever seen it at Chinese computer stores.

Have you guys seem a speed difference from running CAT 3 from the demarc to the dsl modem versus CAT 5e ?Theoretically there should be a difference or maybe it isnt noticable enough, right?

It should make absolutely no difference. DSL requires a pair of conductors running into the modem from the telco. Those conductors can be cat3, cat5, or a pair of coat-hangers.

Many of the 100 year old houses I work in Toronto are pretty much that and they work fine.
