Out Of My Trade But...................

Looking for sources or alternatives to conventional drywall, tape and mud.
Application is finishing a basement of a "lived in" house with a SWMBO that is off the scale with cleanliness and tolerance.

I have seen some vinyl covered gypsum board but do not know sources, prices or if there are any other options. Basement is already studded (wood) and will have about 102" ceiling heights.

Any ideas out there????
