Those are usually done by stair specialists. They are very thin veneers laminated around a form using structural adhesive, sometimes steaming is involved as I would suspect with this tight of a curve.

Ha, I had the same problem when finishing this stair case. I think it took me mediating two or three meetings between the carpenter and the drywaller to work out the issues.

Your framing looks good at this point. I recommend you just fork over the couple of bucks to bring the drywaller back and let him do the drywall. You are going to spend more time than it's worth trying to do it yourself.

My custom staircases are rarely ready when the drywall starts. I always have to bring them back to take care of the underside of the stairs. Make sure you seal the underside of the stairs before covering them up with drywall.

I plastered a spiral ceiling for a drywall company that felt it could not do a satisfactory job. I attached nailers as described. The steel stud idea is a good one.
Since you have drywall up, if you plaster (veneer in your case) as mentioned, run a plastic casing bead down the side to set your grounds. Amico makes nice products. To a degree you can set depth with a rule, but in my case I ended up free handing it a bit mainly since the springer spacing was irregular.

I undercharged (mistake, I really did not know exactly what I was getting into on this one), so I prefer not to say, lest someone get the idea that my price is a fair market quote. But it WAS quite a bit of fun: two helices and a dome (way at the top) with a circular splay.

Here's some I did. This place had some really custom detail. I have more pictures but I'm going to have to dig. This house was built before the digital revolution!
These shots were from when I had to go back an do some hurricane related repairs a few years ago.
