Adding To Window Framing

Hi all, need some advice on window framing.

I am currently renovating a home that is a bit of a mess with respect to wall width. The house is a mix of plaster, drywall over plaster, drywall over lathe, etc. Needless to say, the wall widths are not condusive to regular sized window jambs. I have decided on drywall rather than PVC jambs to help allieviate that issue.

The second issue that I have is that the house currently has stucco, which we be adding vinyl to. Therefore, I need to build the windows out to accommodate for the 3/4 furring strips/insulation. What is the best way to do this? Do I add to the front of the existing window framing or should I perhaps add say 2X6s or 2X8s (depending on the wall) to the full perimeter of the frame. That would reduce the frame size but would certainly be more secure.

Thoughts?

We would install a vinyl framed window into the 1x6 cedar furring around the window and trim out the inside. This way the siding and the window meet and no wraps are required.
