Plane cedar down to 3/8" & glue & nail it to the post. The only problem I can see is that there still could be alot of shrinkage left to the treated post?

That soffit is too nice for a wrap. Put some 1 x cedar around the top and bottoms with a 45 degree cut on the ends. Take a half inch 45 degree router bit and route out the edges of the 6 x 6's only up to about three inches from the cedar boards, then paint it all white.

Don't know if I explained that right, but it's easy to do with a 6 x 6 post and it looks killer.
