My son moved south for school at 18, and never looked back. He still to this day calls me every day. He's now 23.
For his 21st, my wife and I threw him a party at his place ( with his permission and help with planning). We brought two dozen fresh lobsters, along with lots and lots of other food and of course beer. After all the eating was done, and made sure everyone had made arrangements for a nights stay or a ride home, i grabbed momma and told her it was time for us to go. The beer pong game was already going strong.
Yes, I did have a private beer and a shot with my boy prior to leaving.

What you will do depends on what you want to make it for him
If you want it to be a fun and wild thing - take him to a bar or something like that with some of yours and his friends that can drink (his friends so that he will be more comfortable) and just let it take its course without any critisism in case if he drinks (but don't let him go overboard since it might be a negative experience for you two if he gets trashed and does something way stupid).
If you want to make it more of an father-son adult bonding experience - take him somewhere like skiing/hunting/hiking for the weekend. There you can have a good time during the day and get a few beers at night. Just don't start teaching him about life too much - that might make him feel like you think he can't handle it himself.
Well, these are the things I'd want to do with my dad on my 21st - I'm actually 23, so not too far from where your son is. I hope this might inspire some good ideas for you

That's a very good and well-rounded response.

I guess I should have reported back; the Day has come and gone. I picked up a small bottle of Courvoisier and shared a shot with him at home while we talked about the future. He didn't think it was very strong.

I gave him the bottle, and he took it with him later that evening when he went to party with some friends and stay the night.

I am yet to try Courvoisier myself. Need to get myself a bottle one of these days. Lately it has been a lot of beer, jagermeister, and vodka - perhaps its time to start enjoying higher end drinks once in a while.

Most of the "higher end" drinks are enjoyed more by those who've gotten past the serious partying days, and are ready to sip instead of guzzle.

It's hard to remember way back to 23, but to the best of my recollection there weren't many sippers among my peers. Save the expensive stuff for when you're better able to afford--and appreciate--it.
