The Best Smoked Fish In SoFL


I have just polished off one of the best batches of smoked Kingfish ever. Fish dip and beer food tomorrow!

Man, I wish I had a boat! I'm stuck to fishing from the shore...none of my buddies has a boat either. There's fish to be had, but no monster kingfish, mahi, snapper, etc. More like sheepshead, drum, reds, speckled trout, and flounder...

There is nothing like fresh caught smoked king salmon. Have been eating it since I was in diapers.

Oh yea huh? You ever smoked some whiting? I like kingfish brother. I ate a whole flounder last night stuffed with blue crab and a ponchtrain sauce to comment it. RICH RICH but damn it was good.

Come on down to Texas and I will set you up in fine style with some slot reds and some good snooks.

If you go to the members section there is a pic of me with a huge drum.39lb caught on 12lb P line and skitterwalk lure.

I haven't landed a big drum in a long time. I've been trying to get my hands on the sheepshead, but they're extremely tricky to catch. I'm starting to get the hang of it, though. Don't be surprised if I show up in Houston ready to fish one day!

Ill tell you what man. If you are down in this area and want to fish or come to this area to fish. Let me know and I will put you on some good ones. I catch sheephead on accident most the time under a popper cork or free lining shrimp. Do you like to eat sheepshead? Rather than fillet them I prefer to skin them with 2 cuts top and bottom so you can see where the bones are and then proceed to fillet around the bones.

I hate catching slimefish (kingfish), but smoked or balled and fried they are pretty good. The only fish I really like to eat is dolphin and red snapper, though, I give everything else away.

I got some Dorado AKA as Dolphin in the freezer. I breath fishing when Im not working.

What kind of snapper do you like? West Coast Snapper,Lane,Vermillion?

I like cobia,whahoo,mahi mahi,squid,redfish,and prefer monk fish but cant get it anywhere near in Texas.

I see your in Austin huh? Ever fish the spings or Lake Travis?

Nah, all I fish up here is flyrod in the wade-able creeks for guadeloupe bass. I fish Baffin bay, Redfish bay and offshore everywhere.

Heading down to Homer, AK this summer to see how much I can get to stuff into the freezer.
I like Salmon, mostly silvers because they are more fun to catch, and nice to smoke.
But I must have some Halibut reserves for the Winter.

I love sheepshead, drum, red, trout, flounder, kingfish, mahi, snapper (all), whiting, and just about any good eatin fish... I don't like shellfish. No shrimp, lobster, squid, scallops, clams, crabs, etc. Last time out we caught two ladyfish about 24" plus in length....great fight, but fish!

I wouldn't mind a trip to Houston to go fishing at all. I absolutely love to fish..it's what I do almost every time I have time.

We get all of the above here. Kingfish and Amberjacks (AJ's) are best for smoking. The top eating fish IMHO are wahoo, dolphin, grouper, red snapper and everything else can be breaded and fried.

Just a little history; Redfish used to be called mudfish until blackening became popular, it covers up the taste. Snook were called soapfish and if you don't know how to clean one properly, you'll understand why. Speckeled trout taste good but are mushy.

I forgot wahoo. I always bring pre-chopped ceviche ingredients in a tupperware when there is a chance of wahoo. Dolphin will work in a pinch, but Wahoo is the best for ceviche.

Agree about the Redfish~it aint nuttin but a red drum, i.e. saltwater carp. Snook is a also on the list of unedible, but I will eat specks if I am camping on the beach and they are still quivering when I cook them.

I can also do some good with blacktip and lemonfish/cobia, but I would never buy either one.

Grilled kingfish is awesome too......my favorite is mahi, hands down, but I love fish. Redfish isn't bad if you cook it right, and the darker meat tends to be tougher, but it tastes great to me! I don't think I've eaten any snook before, but if there's a chance it tastes like soap, no thanks, lol! You're absolutely right about trout...excellent tasting fish, if you can keep a filet together long enough to cook it!
