Any Real Foodies Out There?


I don't mean guys who eat until their belt pops, or guys who go out, kill something, cook it and eat it right off the grill. I mean guys (and gals) who love to cook, know their foods, and can't wait to try something new or create their own special dish.

And who is into organic, grass fed, free-range, local grown, no hormone bs, non-processed, no gmo, and non-irradiated foods?

Wouldn't that be the sort of thing you go out and kill and eat?

I don't claim to be a co... conno... connoisseur, but I know what I like when I taste it.

I have a killer pork chop & cholesterol casserole recipe I developed some years ago...

Mmmmm food, a favorite subject of mine. I make cheesecakes that weigh about 6 lbs, creme brulee and flourless chocolate cake. My neighbors all complain I'm making them fat as they stuff thier mouths. My wife is Cajun so we cook a lot of that too.

I cook, anything from standing rib roast to Thai stuffed squid.
Cheesecake I do, New York style, creamy. Fresh salsa every Friday and Sunday its crepes for breakfast, or blueberry pancakes, Vermont Maple syrup.

Friday nights its fresh crusty bread, triple cream Brie or a nice goat cheese, grapes and what ever is fresh, like orange slices or pineapple rings and then its Haagen Dazs before bed.
Today is Friday so I'm on it.

Recently I bought "The Miami Mediterranean Diet" by Michael Ozner and for those of you who are interested in lowering your cholesterol this is a good read. My wife and I have really enjoyed preparing some of the recipe's as they satisfy my meat eater mentality and are very healthy.

Pork Chop Casserole Meal

Get a half-dozen or so real pork chops, not those anemic low-fat jobs that are all the rage these days. Brown 'em up on the grill, stove or whatever's handy, with all the seasonings you'd normally use (probably not necessary for this, but it'll get your glands working).

Lay them out in a casserole dish, and cover/submerge them in a 50/50 mix of condensed cheese sauce and cream of mushroom soup, with no dilution. Bake in a preheated oven at 375 degrees for 45 minutes. [Note: you can also do this in a crockpot on High for 2-3 hours.]

The grease from the pork chops combines with the sauce/soup to make an absolutely heavenly gravy, and the pork chops will be tender enough to cut with a fork.

Make your mashed potatoes with the usual complement of milk, butter and seasonings, but also add cream cheese in an amount anywhere from equal to double that of the butter. That will give them a creamy texture and subtle taste that can' be beat.

Steam up some veggies (I recommend corn and green beans), and serve them swimming in butter along with the above.


This is my favorite "company for dinner" recipe, and I've never served it to anyone who didn't take seconds.

I only really eat on friday. This place down the road is only open Fri.,Sat.,Sun. It is called "Porky's" . Pulled pork to die for.

Poutine?
My parents are Canadian born, I was born in the US. So I go out with friends to a fancy French restaurant near where I live and what is on the menu as an appetizer? Poutine for $12.00
My Mom would choke if she heard Poutine was $12.00

My wife only married me for my cooking, and I could hang a picture too!

$12 for poutine as an app? Screw that. Close to me is a small stand in the parking lot of a mall. For $7.00 you get a container 8x8x4 (with extra cheese)

Sounds good enough to give a whirl, try cutting up pork chop fillet's (thick) into big bite size cubes......past some melted butter over them and drop them in a baggie with progress o Italian style breadcrumbs, shake, and then pan fry them with sesame oil.

Good food. We cook at home as a team. I do prep and clean up. My wife creates meals I would be happy to get in fine restaurants. She is inspired when it comes to cooking.

When I have to be out on the road I seek good local restaurants or sandwich shops. I haven't been to a chain restaurant in 20+ years.

There are some dishes that I specialize in. Shrimp scampy with lobster stock and Pernod. Creative pizzas, none with a red sauce. And I do all the baking. Pies, crisp, cakes and cookies. I entered a Apple pie contest with an "Apple walnut pizza pie" drizzled with real maple syrup. I didn't win but all the employees at the orchard recognize me now and asked how to make it.

I find it hard to believe that people go on holiday and go to chain restaurants. What's the point of traveling if not to experience the local area and cuisine. And it is as much fun to find a good diner as it is a gourmet restaurant.

Remember 80% of the money spent at a chain restaurant or box store leaves the local economy. So supporting all local stores and restaurants supports your local economy.

I don't hunt. Deer don't piss me off. But I love to grill and bbq on both gas and charcoal/wood. I'm allways searching for new recipes and techniques.
I cook just about anything on the grill, veggies, fish, you name it. Throw some bricks in your grill, there's your brick oven for pizza (it works well). I bbq even in the winter.

As far as cooking indoors I have a few variations of spahetti carbonara that everyone really enjoys.

For all you bbq people out there check out bbqpitboys.com it's a cool site. Sort of like american chopper and zztop at the grill. When my daughter gets home i'm gonna have her show me how I can attach a link.

Tried a new recipe last night for a cabbage casserole (since on sale for St. Patty's):

Serves 2

Half head of cabbage, chopped
1 can cream of chicken
1 sliced onion
1 cup shredded cheese (jack & colby)
1/2 stick butter

Melt the butter in 9x13 baking dish. Mix remaining ingredients and add to dish atop melted butter. Crush 12-15 Ritz crackers and pour on top. Bake at 350 covered w/ tin foil for 45 min. and remove. Bake for 15 more minutes. Next time I might add a dollup of sour cream and or bacon.
