do what you want,I've seen people with the mysterious leaks that only happen on hot days and their a/c blasting.ever grab a soda out of the fridge on a hot summer day?where do you think the water goes on a metal roof?
it may not be as drastic but it does happen

If you remove the Asphalt roof. Can you attach the underlayment and the Metal (Standing Seam) directly to the plywood?

I try,I have more exp. in repairing the systems that have failed.I have a good basic understanding of venting of roofs and going over old.more so in commercial projects. As far as complete home venting,moisture,blah..no.Just the basics as far as the complete home system.
Been on hundreds of metal roofs on homes, barns, factories, schools you name it.I've seen lots of things go wrong.
from what I understand he want to put a metal roof right over the top of a three tab asphalt shingle roof.
as far as my thinking goes.. the metal will look like crap on top of shingles. The granules will rub the paint off and cause it to rust.
and I think that if he lives in a place like some that I have , where there are drastic changes in temp frequently.and I have seen condesation on both sides of a metal roof.the water may make a small mystery leak.
I don't know his house, venting ,bathing and cooking habits or anything.just something to think about.
seems to make sense in my head somehow.

use the right underlayment.and have fun beating in nails.
I like to pull them and renail the wood where ever it needs it.
