Can't see why anyone would assume they would be trusses, unless like you said that it's a modular. If they are trusses, then there's no reason at all to remove them unless the people were looking for cathedral ceilings or clipped ceilings. Stick frame or scissor truss and be done with it.

They also don't like trusses. They're the worst in fires. At least if the roof is stick framed, you can either salvage the roof or ceiling. Trusses you can't.

Leave the existing overhangs fascia and soffit. They already come down low enough to the windows. Truss co. ca make a truss that will come off the existing fascia with a new steeper angle without dropping the soffit lower. They do that with a support leg down to the outside wall plate which lines up the top chord of the truss (rafter)with the fascia. Draw a scaled drawing of the soffit members with distance out from the plates and distance down to the fascia. Expose all plates if you get the bid, but first try to get them to engineer something that clears existing roof with the leg and a hybrid scissor truss. Require that you get paid for the engineering, opening the soffit, drawing plans, then they get bid after you investigate all this. This is the best way... if they don't want to pay your preliminary fees to do this homework on this then it might be best to stay away from it. I would require complete set of plans with an acceptable custom engineered truss for a bid first. My time to do this would be a set fee before the bid.

Watch for wiring, plumbing and other issues in the existing.

You brought up a good point about the existing roof. I tried during my initial walk through to look in attic but couldn't access. Went back today and insisted to have a look.
