sheetrock vs. plaster in bathroom post and beam ceiling

Hi! I am new to this site. Looks like it will be great to gain and give info.

I have about 30 years experience in sheetrock, sheetrock repair, repair of old plaster (I do a lot of work in old, 1700's and 1800's houses). I have to put up a ceiling in a bathroom, very low ceiling, no exhaust vent (common in old houses), in-between the exposed beams. I am reluctant to use sheetrock because it and joint compound absorb water so easily. Even if painted, the edges (where the finish meets the beam) will be able to absorb water. I have seen a cement-like plaster used to finish plaster board that is like a rock and impervious to water which is used for such ceilings. Does anyone know what is used for this and how easily my sheetrocking skills would transfer to this type of job?

That question seems strange coming from someone who says they've been doing the same type of work for 30 years, Bunc.
