I don't do a lot of drywall but is a folded corner a strong corner? I would think a kid could poke something throught the paper?

I'm not sure what he means about a "folded corner" but I don't think he means that he just uses tape on the outside corners, if that's what you're asking about. On another page, he says he uses all steel corner bead instead of paper and steal.
I would hire him (on a small one first). I bet he can back up what he says. His style reminds me of Sonny Lykos.

HTH do you "fold" a ceiling-to-wall edge? What supports that ceiling half in a few months, as it starts to slowly peel down the paper on the wall part? That roll of paper becomes a wrinkle.

I have personally installed, finished, and textured thousands of sheets of drywall over the past 15 years!! I can see he is striving for perfection. The solution is.....this..... " Some LocalTradesman can obtain near perfection a little quicker in life." How about the Framers??? Doesn't it come down to accountability?? I would say that the corners will be weaker with the perfect corner method. In a normal install one sheet butts to the other!!!! If he tapes his corners, as he should, everything will be fine. Slower and more costly though. I prefer a slower dry on my drywall, as, my own rule of thumb. Perfection in finishing is what straightens out corners and walls also!!!

I like him
What I don't like is:
-3 coats in one day
-Skeptical about folded corners
-He doesn't use enough screws.
Other than that his work looks pretty neat. Drywall guys deal with a lot of b/s, I appreciate that he's upfront about it. How many times do the drywall guys start a job only to find the walls aren't prepped for them, or the GC will screw up his timing and the plumber/electrician comes and rapes the walls.
Eff it, more power to him!
