Refinishing old growth fir floor

I have a job involving finishing an old growth fir floor. I need to find a filler that can fill in the voids between the boards. I realize that i need to account for expansion and such, but i have seen this done with good results elsewhere.

For example, there is an old school house that currently houses a winery in Walla Walla, Wa (l'Ecole winery) that had the same floors. It looks like some sort of epoxy filler? They have huge temp differentials in Walla Walla. it can be 105 in the summer and minuses in the winter and this floor is holding up great!

Does anyone have an idea as to what this material may be?

Thanks!

Wood flour for sure. And it dries really fast. You can fill and sand the same day.
